Highfield Preserves handcrafts the marmalade in small batches using traditional open pans. Each 100g is prepared with 35g of fruit, and the recipe includes sugar and water, with fruit pectin as the gelling agent and citric acid as the acidity regulator. Its total sugar content is 65g per 100g.
